Hawaiian Kona Coffee Glazed Ribs with Salad

Ingredients

Ingredients:

  • 1 lbs Pork spareribs        
  • 24g Roasted garlic           
  • 1.5 pcs Yellow onion (diced caramelized)              
  • 330g Brown sugar           
  • 710g Strong Kona coffee             
  • 360g Apple cider vinegar             
  • 720g Ketchup   
  • 360g Worcestershire sauce        
  • 9g Salt  
  • 45g Chipotle powder     
  • 2g Cayenne powder (omit for not spicy)
  • 60g Dijon mustard          
  • 300g Honey       

Directions

  1. Combine all ingredients in saucepan and bring a boil.
  2. Reduce heat to simmer, and reduce by 1/2 or until thickened.
  3. Blend with a stick blender until smooth.
  4. Cool and set aside.
  5. Preheat the oven to 160 degrees C.
  6. Rub the sauce onto both sides of the ribs. Set aside to marinate for 20-30 minutes (ideally overnight).
  7. Place the ribs on a baking tray. Cover with foil then bake for 45-60 minutes or until the meat is pretty tender.
  8. Remove from oven, turn up to 180 degrees C. Remove foil, baked for 15 minutes or until slightly burnt.
  9. Slather with barbecue sauce and bake 5 more minutes. Repeat until you got a thick glaze on the ribs.
  10. Serve with remaining barbcue sauce.
