Hawaiian Kona Coffee Glazed Ribs with Salad

Ingredients:
- 1 lbs Pork spareribs
- 24g Roasted garlic
- 1.5 pcs Yellow onion (diced caramelized)
- 330g Brown sugar
- 710g Strong Kona coffee
- 360g Apple cider vinegar
- 720g Ketchup
- 360g Worcestershire sauce
- 9g Salt
- 45g Chipotle powder
- 2g Cayenne powder (omit for not spicy)
- 60g Dijon mustard
- 300g Honey
Directions
- Combine all ingredients in saucepan and bring a boil.
- Reduce heat to simmer, and reduce by 1/2 or until thickened.
- Blend with a stick blender until smooth.
- Cool and set aside.
- Preheat the oven to 160 degrees C.
- Rub the sauce onto both sides of the ribs. Set aside to marinate for 20-30 minutes (ideally overnight).
- Place the ribs on a baking tray. Cover with foil then bake for 45-60 minutes or until the meat is pretty tender.
- Remove from oven, turn up to 180 degrees C. Remove foil, baked for 15 minutes or until slightly burnt.
- Slather with barbecue sauce and bake 5 more minutes. Repeat until you got a thick glaze on the ribs.
- Serve with remaining barbcue sauce.
