Mixed-Nuts Mooncake

Dough:
- 100 gr U.S. flour
- 60 gr U.S. honey
- 25 gr cooking oil
- 2 gr water
- ⅛ tsp salt
Mixed nuts and dried fruits filling:
- 30 gr U.S. walnuts
- 30 gr U.S. pistachio nuts
- 30 gr U.S. almonds
- 30 gr U.S. pumpkin seeds
- 25 gr U.S. dried cranberries
- 15 gr U.S. white sesame seeds
- 15 gr U.S. black sesame seeds
- 25 gr candied winter melon
Paste for the filling:
- 20 gr honey
- 15 ml sesame oil or regular cooking oil
- 5 gr sugar
- 30 gr glutinous rice flour
- 1 tbsp water or more as needed
- ⅛ tsp salt
Egg wash:
- 1 U.S. egg yolk
- 1 tbsp water
- Pinch of salt
Directions
- Prepare the dough: Mix honey, alkaline water, and oil until combined. Sift in flour and salt and mix until combined. Cover and rest the dough for at least 1 hour or up to 3 hours
- Place 30 gr of glutinous rice flour on a dry non-stick pan over medium heat. Stir fry for about 15 minutes or until the flour started to smell slightly nutty/toasted. Let it cool down completely
- Preheat oven at 350 F (180 C). Arrange the nuts and seeds on a large baking sheet and roast them for 15 minutes. Let them cool down completely
- Finely chop nuts and dried fruits
- Put the nuts, seeds, dried fruit together, and paste together
- Fill and shape
- Bake for 9 minutes. Let them cool down for 15 minutes.
- Beat the egg yolk with a small pinch of salt and water.
- Very gently and thinly brush this egg wash on top of the mooncake
- Bake for another 5-8 minutes or until you have a nice golden brown
- Cooling and ready to be served
