Peach Salsa with Cinnamon Sugar Pita Chips

Ingredients

Ingredients:

  • 450g Tomatoes (diced) 
  • 1 pc Bell pepper  (seeded, finely diced) 
  • 2 pc Jalapenos (seeded, finely diced)      
  • 1 pc Onion (medium)    
  • 450g Peaches   
  • 15-20g Cilantro
  • 30g Lime juice  
  • 3g Salt  
  • 2g Black pepper
  • Pork Pattie         
  • 500g Grounded pork     
  • Salt and Pepper
  • 10g Corn starch
  • 10g Vegetable oil            
  • Cinnamon sugar               
  • 2g Grounded cinnamon
  • 30g Sugar           

Directions

Peach salsa

  1. Chop tomatoes. Add to a large mixing bowl.
  2. Finely chop jalapenos and bell pepper, onion and add them all to the bowl.
  3. Cut the peaches into 1×1 cm dices and add to the bowl.
  4. Add chopped cilantro, lime juice, salt and pepper. Adjust seasoning to taste.

Pork patties

  1. In a mixing bowl, add grounded pork, salt and pepper, corn starch and vegetable oil and mix well. Set for 30 minutes.
  2. Roll pork mixture into a 30-35g balls and press into a 2cm thick patties.
  3. In a skillet, add olive oil. Cook pork patties on medium-high heat until cooked.
  4. Turn heat to medium low. Sprinkle cinnamon sugar on both sides of the patties and cook until golden.

Serve immediately with peach salsa and toasted pita bread on the side.
