U.S. Pollock Grill with Pesto Sauce

Ingredients
For the Grilled Pollock:
4 Pollock
Salt and pepper to taste
2 tablespoons olive oil
For the Pesto Sauce:
2 cups fresh basil leaves
1/2 cup grated U.S. Parmesan cheese
1/4 cup pine nuts or U.S. walnuts
2 cloves garlic, minced
1/2 cup extra-virgin olive oil
salt and pepper to taste
Directions
Prepare the Pesto Sauce:
1.In a food processor, combine the basil leaves, grated Parmesan cheese, pine nuts or U.S. walnuts, and minced garlic.
2.Pulse the ingredients until finely chopped.
3.With the food processor running, slowly drizzle in the extra-virgin olive oil until the mixture becomes a smooth sauce.
4.Season the pesto sauce with salt and pepper to taste. Blend again to incorporate.
Grill the Pollock:
1.Preheat your grill to medium-high heat.
2.Pat the pollock filets dry with paper towels. Season them with salt and pepper on both sides.
3.Brush the filets with olive oil to prevent sticking.
4.Place the pollock filets on the grill and cook for about 3-4minutes on each side, or until the fish flakes easily with a fork. The cooking time may vary depending on the thickness of the filets.
Serve:
1.Once the pollock filets are cooked, transfer them to serving plates.
2.Drizzle the prepared pesto sauce over the grilled pollock filets. You can also serve extra pesto on the side for those who want more.
3.This dish pairs wonderfully with a side of roasted vegetables, quinoa, or a fresh salad.
