The Delicious USA festival is back for its third year from July 1 to July 31, 2021! A range of diverse restaurants across Hong Kong will showcase creative dishes using the finest U.S. seafood.
One of the most popular and famed American exports is American Lobster, also known as Maine Lobster. Maine Lobster is widely considered to be the best lobster in the world. The United States is the world’s second largest lobster exporting country but this famous crustacean is not the only seafood exported from the U.S. Oysters, Tuna, Crab, Salmon and much more are sourced from American waters.
As one of the world’s top producers and exporters of these products, it is of the utmost importance that these products are harvested in the most sustainable way possible. Thankfully, the U.S. is home to a plethora of responsible fishers and producers. American Seafood
Sustainable seafood is a term that has generated a lot of buzz in recent years due to the growing demand for safe, healthy and affordable seafood products. Sustainable seafood refers to seafood that is caught or farmed in ways that protect the oceans’ well-being as well as fishery-dependent communities. Through sustainable fishing practices, fisheries can exist long term without compromising the survival of the species or the health of the surrounding ecosystem. Therefore, sustainable seafood is the most environmentally efficient source of protein on the planet.
Most American Seafood comes from Alaska and the Northeastern United States. All Alaska Seafood is wild, matures naturally and is managed responsibly for continuing abundance. Alaska became a pioneer of sustainable fishing when it became the only state with sustainability written into its constitution in 1959. Most Alaskan fisheries are family-run and have been for generations. The livelihood of many communities depends on fishing and it is for this reason that Alaska upholds strict fishing laws and uses sustainable harvesting measures. Workers in the seafood industry are protected under multiple organizations to ensure safe and fair working conditions.
Alaskans firmly believe in using the whole fish to prevent any waste. Bones are used in pet food and fertilizer, stomachs & roe are delicacies exported all over the world, skin is used in biodegradable plastic and textiles and oil is used in supplements. In Alaska, fish comes first.
The needs of the ecosystem are prioritized over the harvest, which is how there has, incredibly, never been an Alaskan species on the endangered species list.

Lobster
Today, lobster is thought of as a gourmet ingredient. Yet this luxurious shellfish had some humble beginnings when it was served to American prisoners in the 1700s. Now an international delicacy, American Lobster accounts for around 55% of the global lobster supply. Available year round, American Lobster is sustainably sourced and traceable throughout the supply chain through strict resource management procedures. Maine is the most stringent in terms of lobster fishery regulations, with gear restrictions such as biodegradable traps that let lobsters loose if lost at sea and limits on the number of traps that may be set. There are also strict monitoring and reporting requirements that both captains and lobster catchers must fulfill. Lobster processors maintain strict safety standards using advanced technologies, producing lobster which is of a high quality, has a long shelf-life and is easily available.
American Lobster is also highly nutritious as an excellent source of protein which also contains zinc, phosphorus, Vitamin B12, Vitamin E, magnesium and Omega-3 fatty acids! Oyster
Mostly found in the Northeastern United States, Oysters have long been a delicacy in the U.S., in fact, it was in 19th century New York that taverns began pairing oysters with fine spirits.
