U.S. Grilled Maple Leaf Duck with Pineapple Sauce
Ingredients
1 U.S.whole Maple Leaf Duck (about 5-6 pounds)
Salt and pepper to taste
20g butter
1 fresh pineapple, peeled, cored,and diced
1/2 cup pineapple juice
1/4 cup soy sauce
2 tablespoons honey
2 cloves garlic, minced
1 teaspoon ginger, minced
1 tablespoon vegetable oil

Directions
Prepare the Duck:
1.Dry the duck with paper towels. Season the duck inside and out with salt, pepper.
2.Stuff the pineapple and thyme into the duck.
3.Truss the duck by tying its legs together with kitchen twine.
Make the Pineapple Sauce:
1.In a saucepan, heat the butter over medium heat.
2.Add the minced garlic and ginger. Sauté for about 1 minute until fragrant.
3.Add the diced pineapple to the pan and cook for another 3-4minutes until slightly softened.
4.Pour in the pineapple juice, soy sauce, and honey. Stir to combine.
5.Allow the sauce to simmer for 10-15 minutes, stirring occasionally, until it thickens and reduces slightly. Remove from heat.
Grill the Duck:
1.Preheat your oven 230°C.
2.Place the Maple Leaf Duck on the grill, breast side up. Grill for about 15 minutes.
3.Flip the duck over and turn the oven to 180C grill for an additional 45 minutes,
4.Brush the duck with some of the pineapple sauce on both sides. Continue to grill, basting occasionally,
5.Until the internal temperature reaches 75°C for the breast meat and 80°C for the thigh meat.
6.This should take around 1 to 1.5 hours in total.
Serve:
1.Once the duck is cooked through, remove it from the grill and let it rest for a few minutes before carving.
2.Serve the grilled duck with the remaining pineapple sauce on the side.
